This simple broccoli cheese soup can be made in 30 minutes. I’m serious. I’m not joking around. Rachael Ray should have made this soup on her 30 minute meal show.
This is my go to recipe for taking dinner to a friend or new mother. This soup paired with my Simple Homemade Bread is the perfect combo. My kids beg for this soup. Simple Broccoli Cheese Soup
- 4 to 5 potatoes, peeled and cubed
- 2 cups sliced carrots
- 1/2 cup chopped celery
- 1 cup onion, diced
- 1 1/2 lbs chopped broccoli
- 1/3 cup butter
- 2 cups skim milk
- 1/2 cup flour
- 1 teaspoon dry mustard
- 1 to 2 cups shredded cheddar cheese (I prefer medium or sharp)
- 6 bullion cubes dissolved in 2 cups water
Put first four ingredients in soup pan with 2 1/2 cups water. Cook everything until tender. Add broccoli, cook 7 more minutes. Add a little salt and pepper.
In a separate sauce pan, melt butter, add flour and dry mustard. Pour in milk all at once. Cook over medium heat until thick and bubbly. Dissolve 6 bullion cubes in 2 cups water. Add to white sauce. Cook until thick . Add 1 to 2 cups shredded cheddar cheese. Add white cheese sauce to the vegetables. Add cooked cubed chicken if desired. Salt and pepper to taste. It’s ready to serve or put in a crock pot on warm for later use. Enjoy!
